Method
- Heat the olive oil in a large pot over medium heat.
- Add the duck pieces and brown them on all sides.
- Remove the duck and set it aside.
- In the same pot, add the chopped onion and minced garlic, sauté until soft.
- Return the duck to the pot, add the bay leaf, and season with salt and pepper.
- Pour in the chicken broth and bring to a boil.
- Add the rice and stir well, then reduce the heat to low and cover.
- Cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
